Red Velvet (Chocolate Beet) Cake
Admittedly, i'm far from being a Jedi Master at cake frosting - eh, there's always next time
I found this chocolate cake recipe online at kidscooking.about.com/od/desserts/r/beet_cake.htm and just used ener-g egg replacer instead of eggs - to "veganize" this cake.
This is really a beautiful cake, even inspite of the my admitted noviceness :(
In case you're wondering, no - you do not taste the beets. the cake is delicious. it's a bit thick, not as light/fluffy as i would have hoped - sort of halfway between cake and brownie texture - but still very very good.
For an added layer of flavor - i ground (grinded?) up a whole bunch of red pepper flakes - using my Magic Bullet and mixed it in w/the batter - which gives it a nice touch of heat.
For me, the heat was an added touch but barely perceptible - for my gf - i think she was cursing me ... oops - ha!
