My Chocolate Zucchini Cake

Please, like I have only one guilty pleasure or secret vise?!
This weeks joy is my super huge dense chocolate cake from my birthday.
Again another quick simple SP this week. Apologies for the blurriness of the items in my frig.
For the 2nd year in a row I'm sick after my birthday. Damn summer colds. Chocolate cake heals everything. It's true. I think I read it somewhere. That an sinus medication makes your head loopy.

I noted in the tags this cake is more dense brownie-like and make with zucchini not milk or cream. Yup! A Chocolate and Zucchini Cake!

Yesterday, my fellow foodie buddy, Linh, came back to Minnesota for the weekend. She asked me to cook her dinner and I accepted the challenge.

I baked a chocolate and zucchini cake with a side of natural vanilla ice cream topped with homemade raspberry coulis. It was so good.

I used heirloom Cocozelle zucchini that I grew in my back yard, in old tires.

This recipe is amazing, the inside is so moist and tender, the outside crispy and just a little bit sweeter.

We ate this cake with Haagen Dazs vanilla ice cream. INCREDIBLE!
