Chocolate Mayonnaise Cupcakes With Cocoa Frosting
Chocolate mayonnaise cupcakes with cocoa frosting.The recipe is from Best Ever Chocolate Desserts by Rick Rodgers, my all time favorite cookbook. It's copyrighted, but very cheap to get ahold of. Also, this free recipe is virtually the same. I made a double batch to get about 30 cupcakes, and I used Hershey's regular non-Dutch cocoa for the cake batter.

For the frosting I adapted to the following. It made way more than I needed for 30 cupcakes. We ate a lot of it on vanilla ice cream for days and days. It was great!
4 cups confectioners' sugar
3/4 cup Hershey's Special Dark cocoa
about 1 pint heavy whipping cream
3/4 a stick of butter, softened
Sift together the sugar and cocoa. Whip the butter until soft, then alternate adding the sugar/cocoa mixture and the cream until you have a volume and consistency you like.
