2007 Year's Eve Dinner: Molten chocolate cake with fig & Pedro Ximenes ice cream
Yes, yes, I know... I tend to dwell on the same chocolate recipes. For a while, it was Michel Richard's "Le Kit Cat," which happened to be quick and convenient fix for a number of parties I had to attend. Now, it's the molten chocolate cake, which is so 1992, I know. But hey, it's 2006, almost 2007, and isn't retro back in?
Forgive me, but I made the same chocolate molten cake as at my Christmas Eve dinner. However, this time, instead of banana-rum raisin ice cream, I made a fig and Pedro Ximenes ice cream. I served this dessert with the same Alvear PX Solera 1927 that I used to macerate the figs in.
Where did I get the idea for the ice cream? Honestly, Jean Georges, also the father of the original molten chocolate cake. One of the best ice creams I've ever experienced was the prune and armagnac ice cream at Jean Georges in New York. I had corresponded with restaurant's pastry chef, Johnny Iuzzini, for the recipe, but there were few kinks I couldn't quite work out. So, I made my own - but combining two of the things I love the most: figs & chocolate, and PX with figs. Voila! Figs and PX ice cream with chocolate.
